Blue Chips
thin sliced redskin potatoes
salt & pepper
butter,melted
1/4 c.diced red pepper
1/4 c.diced green onions
1/2 c.bacon pieces
1 c.blue cheese crumbles
1/4 c. heavy cream
Method:
1.fry potatoes until they are fried like chips.
2.top with butter, salt & pepper.
3.in saucepan, heat cream and 1/2 c. of blue cheese until light sauce forms.
4.top chips with red pepper, onions, bacon & blue cheese cream.
5.place under broiler for 2-3 minutes.
6.top with crumbled blue cheese
Baby Stuffed Eggplant
2 baby eggplant, sliced in half
salt & pepper
4 oz Gorgonzola cheese
2 baby eggplant, sliced in half
salt & pepper
4 oz Gorgonzola cheese
3 oz cooked sausage crumbles(spicy)
1/3 c bread crumbs
2 T. olive oil
fresh basil, chopped
1 teas. hot sauce
4 Roma tomatoes
2 garlic cloves
Method:
1.heat oven to 325 degrees. roast eggplant with 1 T. olive oil, salt & pepper for 8 minutes.
2.in bowl, blend cheese, sausage, bread crumbs, basil & hot sauce.
3.fill eggplant with cheese mixture and reheat in oven until cheese melts properly.
4.quick saute tomatoes with garlic cloves and remaining olive oil. Pour into carry out container.

4 slices hilltop hearth cranberrry walnut bread
6 oz thinly sliced honey ham
sliced honeycrisp apples, skin on
shaved red onions
sliced Havarti cheese
habenero peach jam
butter
Method:
1.top bread with ham, onions, apples, Havarti and jam.
2.spread butter on outside of bread and press on a panini machine until rich and gooey and fantastic!
6 oz thinly sliced honey ham

3.holds up extremely well for takeout fare.
